As a user I want to insert a list by typing the shortcut '-' in order to structure my text
Not sure I would want this. What if I just wanted to insert '-'? Why can't a list formatting/style button be used?
This is mixing Wiki text-only editor with inline codes, and a rich editor with buttons for styles.
